Recipe for 6 people
- 300gr. of whipping cream
- 50gr.of powdered sugar
- 6 meringues
- 6 whole marron glacés (candied chestnuts)
- 9 chopped marron glacés
- 6 teaspoons of marron glacé syrup
- Cocoa powder
Preparing the cream. In a glass bowl put the powdered sugar, 100gr. of cream, stir until the sugar is well dissolved, then add the rest of the cream. With the help of a very fine strainer and a funnel, pour the cream in a whipped cream siphon, close, put a charger and shake vigorously.
Finishing and presentation of the dish.
Place the marron glacés in the centre of the dish, sprinkle the crumbled meringue around it, cover with siphoned whipped cream to form a small mountain, put the chopped marron glacés on top of the cream, another layer of crumbled meringue and cocoa powder.
